“The duck liver mousse is the starter that comes up most in conversation about this place, smooth and rich with a compote alongside and good toasted bread that gives you something to spread it onto generously. It's the kind of composed charcuterie dish that you don't expect from a room that looks like this and that's exactly the pleasure of it. The pork belly with whatever seasonal vegetable and grain the kitchen is working with at the time is the main that gets ordered most consistently, slow-cooked until the fat is properly rendered and the meat underneath is tender without being loose. The fried chicken with duck fat biscuits is another anchor dish that shows up in people's descriptions of what to order, the biscuits specifically being something the kitchen takes seriously enough that they arrive properly layered and buttery and worth finishing even after everything else. The Smashburger with white American cheese and caramelized onions is the lunch move for anyone who wants something more straightforward, a properly crusty, juicy patty in the tradition that the format deserves. Wash all of it down with a pour from the whiskey selection, which runs to well over a few hundred bottles at any given time, and the whole evening arranges itself into something that feels like exactly the right kind of Chicago night.”

“Longman & Eagle is in Logan Square on Kedzie, and while the neighborhood has evolved significantly around it since 2010, the restaurant itself has stayed more or less exactly as it was when GQ named it one of the best new restaurants in America in its opening year. It's Michelin Bib Gourmand recognized. It stocks over 400 whiskeys including ultra-premium and vintage bottles. And it operates with a casual, slightly scruffy gastropub energy that makes all of that feel approachable rather than intimidating. The menu rotates seasonally and the kitchen sources from local farms with real fidelity to what's actually available. On our visit the duck fat biscuits were on the table almost immediately and they were the kind of thing that makes you understand why a restaurant would make duck fat biscuits, soft and rich and fractionally better than they had any right to be. The smashburger is a double-patty Slagel Farm beef situation with white American, pickles, caramelized onions, and dijonnaise that people tend to mention specifically and for good reason. The bone marrow arrived in the bone with sourdough, herbs, and pickled shallot, and was the richest thing on the table and possibly the best. The fried chicken dinner with biscuits and hot honey on the side is the other dish that comes up constantly in what regulars order. For the whiskey program, three dozen bottles are available at three dollars a shot every day, which is one of the more unusual and generous things any bar in Chicago does. The back patio is its own separate bar with its own menu and a different, more outdoor-gathering feel when the weather allows.”
