Great atmosphere with a welcoming, friendly staff. The manager personally checked in to make sure everything was perfect, which I really appreciated. I started with the mussels and clams—they were absolutely delicious, full of flavor. For my entrée, I had the steak with fries; the fries were light and crispy (not greasy at all), and the steak was seasoned perfectly with a really tasty chimichurri sauce. For dessert, I tried the tres leches cake. It was beautifully presented and had good flavor, though it didn’t quite capture the moist, traditional tres leches texture—it was a bit too dry for that. Still, it was enjoyable overall.

We thoroughly enjoyed the food, ambiance and the service. The space is very sleek with an amazing rooftop. Very vegan/vegetarian friendly food that's delicious. We got the roasted potatoes, truffle schatie, the roasted pinsa and a chop salad. Everything was great. Service was incredible. Excellent experience overall.

Dinner at the bar without reservation. Had the Truffle Sachetti, good creamy sauce and a glass of wine. Quick friendly service. Modern design, entrance either underground to elevator or through side lobby of Hilton Garden. Patio should be nice when the weather warms.

This was an unexpected treat! Hotel restaurants often suffer boring menus and assembly line food. To my pleasant surprise, Seville is the real deal. Our waiter (Zared) was super knowledgeable about the drink and food selections, which were very uniquely curated and prepared, all in Spanish theme. My wife and I started with a Spanish version of mushroom crostini which was absolutely delicious. My entree was duck sausage pasta; out of this world unique and delicious. In keeping with the Spanish theme, I ordered a "Running with the Bulls" cocktail, a sangria type cocktail. Overall great experience. We will be back next time we are in Chicago!

Absolutely incredible restaurant: food, staff, atmosphere was all amazing! Visited twice for a recent work trip, and we had multiple items on the menu. Nothing was less than “oh, wow, that’s delicious!” I can’t wait to come back and order the rest of the menu. Best pasta I’ve *ever* had. Great job to the chefs and staff!

Seville is a prime location with incredible ambiance. It’s on the 16th floor, so there were nice views, and can just imagine how beautiful the patio is in the summer! We came to celebrate a friend’s birthday- the hostesses and servers were all very friendly and helpful. Food and drinks were delicious! We had a delightful citrusy pasta that was one of their specials. I highly recommend their Truffle Sacchetti! Both pastas are pictured. We had a lovely time. Definitely looking forward to my next visit!

One of the best dining experiences I’ve had in Chicago. Dined in on Valentines and had the chance to experience their exclusive menu for the evening. Now, I’m no stranger to their fine cuisine but this menu was the perfect companion for a wonderful evening. You can see the care that the staff at Seville put into their service and that stems from the management team. The definition of hospitality. Our server Kimberly was such a delight throughout dinner and we enjoyed meeting the executive chef when he stopped by our table and shared his tricks on how he executed the perfect crust on the Branzino that we had. A phenomenal evening at Seville.
