“This was my first visit, and it did not disappoint. I started with the shrimp cocktail appetizer—the shrimp were monsters. For my entrée, I had the surf and turf sushi roll, and it was phenomenal. Great service, a great atmosphere, and the sushi prep area was really impressive. Highly recommend!”

I started with the sashimi—octopus and salmon—and both were incredibly fresh, delicate, and full of flavor. You can immediately tell the quality is top-tier. Then came the cap cut steak, and honestly, it was perfection. Cooked exactly right, tender, juicy, and seasoned beautifully—every bite felt like it was done with intention. Even the small details stood out. The bread and butter they serve at the beginning? The bread was warm in that just-right way that makes you slow down and enjoy the moment. It set the tone for everything that followed. Every single bite I had was delicious. From start to finish, the experience was seamless, comforting, and elevated at the same time. “Here in Chicago for a conference being held at the Hyatt Regency Hotel, the weather was uninviting enough to not venture out for dinner, and oh boy, am I glad I didn’t! The Jumbo Shrimp Cocktail appetizer were indeed quite JUMBO. The Grilled Corn side dish, sprinkled with chipotle powder, reminded me of a dish in Dubai 10 years ago, which I have never forgotten, it was so amazing. The Tuna and Salmon Sashimi were thick-cut and amazing. The Dalmore 18 Year Single Malt Scotch was everything I hoped for, based on my experience with Dalmore 14 Year previously. The restaurant itself is beautifully decorated. Music is muted but enjoyable. Overall, it was a fabulous dinner, and one I highly recommend.”

“One of the best dining experiences I’ve had in Chicago! My sister and I came to Stetsons Modern Steakhouse + Sushi for a girls’ night and everything was exceptional from start to finish. We decided to trust our server, Anthony, with the entire menu — and he absolutely delivered. His recommendations and wine pairings were spot-on for every course and truly elevated the whole experience. We ordered a mix of sushi and steakhouse classics, and every dish was outstanding. The Sunset Roll and Dragon Roll were packed with flavor, the Shrimp & Scallop Roll was fresh and bright, and the 10oz Filet Mignon was perfectly cooked and melt-in-your-mouth tender. The sides were just as impressive — especially the grilled corn with lime crema and chipotle dust and the creamed spinach. The crab cake was another standout with almost all crab and barely any filler. Between the incredible food, the cozy upscale atmosphere, and Anthony’s thoughtful, attentive service, this was an unforgettable night. Highly recommend Stetsons whether you're staying at the Hyatt Regency Chicago, planning a date night, or just craving amazing sushi and steak in the same place. I’ll definitely be back!”

“This place is so much more than just beautifully decorated. It blends marble, leather, and wood in an elegant and cozy atmosphere. Yes, the food took a little while to arrive, but just the right amount of time to bring out truly spectacular dishes. The service and attention, while not the most outstanding part, were still very good. When people say this place is worth it for everything, Stetsons truly proves it. For me, it deserves a solid 5 out of 5. Excellent dishes, prepared with care and patience—the way a great restaurant should. I loved it, and I’ll return every time I can.”
