One of the best dining experiences I’ve had in Chicago! My sister and I came to Stetsons Modern Steakhouse + Sushi for a girls’ night and everything was exceptional from start to finish. We decided to trust our server, Anthony, with the entire menu — and he absolutely delivered. His recommendations and wine pairings were spot-on for every course and truly elevated the whole experience. We ordered a mix of sushi and steakhouse classics, and every dish was outstanding. The Sunset Roll and Dragon Roll were packed with flavor, the Shrimp & Scallop Roll was fresh and bright, and the 10oz Filet Mignon was perfectly cooked and melt-in-your-mouth tender. The sides were just as impressive — especially the grilled corn with lime crema and chipotle dust and the creamed spinach. The crab cake was another standout with almost all crab and barely any filler. Between the incredible food, the cozy upscale atmosphere, and Anthony’s thoughtful, attentive service, this was an unforgettable night. Highly recommend Stetsons whether you're staying at the Hyatt Regency Chicago, planning a date night, or just craving amazing sushi and steak in the same place. I’ll definitely be back!

“This place is so much more than just beautifully decorated.”

This place is so much more than just beautifully decorated. It blends marble, leather, and wood in an elegant and cozy atmosphere. Yes, the food took a little while to arrive, but just the right amount of time to bring out truly spectacular dishes. The service and attention, while not the most outstanding part, were still very good. When people say this place is worth it for everything, Stetsons truly proves it. For me, it deserves a solid 5 out of 5. Excellent dishes, prepared with care and patience—the way a great restaurant should. I loved it, and I’ll return every time I can.

The food at Stetsons is wonderful. The hospitality here feels like you’re getting dinner friends. I had desert and the chocolate cake is the stuff of dreams. Big enough for a table of 6. Really appreciated my time at Stetsons.

Staying at the hotel and it was way to cold to go walking to anything downtown. I was very impressed with the meal and service. Barbra was a very attentive server, I never waited on anything. Food was cooked to perfection, Sushi was amazing. highly recommend trying them out when in town.

We stayed at the Hyatt and didn't know this was actually downstairs inside of our hotel and it's truly a gem. The steak here is the SHOW! Service was amazing. Consistently refilled water and cleared empty dishes off of the table. Dining is a nice upscale experience. We would definitely eat here again!

Stayed at the regency and was craving some steak. Usually don't see skirt steak cut at steak restaurant and they had a prime hanger. Gave it a shot and it was one of the best skirt steak I've had in a restaurant. Very nice char on the steak and the meat was cooked to a perfect medium in the thicker sections. Nice char on the veggies as well. They also had sushi on the menu may give that a shot next time.

During a recent family visit to Chicago, we had the pleasure of dining at Stetsons Modern Steak & Sushi, located within the Hyatt Regency. We enjoyed two visits, and both were exceptional experiences! The highlight of our evenings was the impeccable service provided by Jesus, who was attentive, warm, and ensured our meals were perfect from start to finish. Both the sushi and steak were prepared to perfection, with every dish being fresh and flavorful. The combination of excellent service and outstanding food made each visit truly memorable. We highly recommend this restaurant and look forward to returning on our next trip to Chicago!
