“Mindy's Bakery sits at the triangle corner of Milwaukee, North, and Damen in Wicker Park, and on any given morning there's a line snaking out the door that tells you something before you even smell the place. Then you get close enough to catch the smell, and the line starts making complete sense. Mindy Segal is a James Beard Award-winning pastry chef, and this bakery is her full creative attention on display every single day. The cinnamon roll was the first thing we grabbed, thick and gooey and enormous, with a spiral that ran deep into the center and a glaze that pooled at the bottom of the container. It had that slight chew that separates a great cinnamon roll from every other one you've had. We also got an almond croissant, which was properly laminated with a crispy, shatteringly flaky exterior and a soft, almond-cream center that was rich without being sweet to the point of distraction. The real surprise was the banana bread, which a few people ahead of us in line seemed to have come specifically for, moist and dense with actual banana chunks through it and what tasted like a subtle cream cheese swirl that nobody mentioned but everyone noticed. A cheddar bomb, basically a savory scone with a cheddar pull to it, rounded out our order and was the right thing to have last after all the sweetness. The staff moved through a long line with genuine warmth and a kind of practiced efficiency that made the whole thing feel effortless. Go early, some items sell out, and don't make the mistake of only getting one thing.”

During the colder months the hot chocolate is amazing and they also serve chicken pot pies on occasion which are a real game changed.”

I stopped by on a Thursday morning, and it was pleasantly quiet, perfect for taking my time deciding which pastry to try, since weekends are usually packed with long lines. I went with the Dubai Chocolate Croissant, and it was fantastic! I didn’t really taste the pistachio, but it was still incredibly good. I also tried their seasonal Grand Au Lait, which was malted banana, and it was SO good. I got it iced, and the banana flavor was perfect. I’ll definitely be coming back soon to get it again.”

“I’ve had baguettes in Paris, bagels in New York, alfajors in Buenos Aires, and churros in Spain. I’ve even had danishes in Denmark (AND Vienna, where viennoiserie is actually from). Mindy’s goes pound for pound with any bakery anywhere. They have RANGE. They can do salty, and they can do sweet. They have creative offerings you won’t see anywhere else — coffee, bread, pastries, you name it! The only reason I would tell you not to go here, is so that the line will be shorter when I arrive.”
